Can just confirm that this is an issue with Server 2012 and Windows 8 Hyper-V. It goes away with Windows Server 2016 and Windows 10.

Workaround, do as Michael says, use console command to reset the UI.

Try enabling CONSOLE_CMD (in config/general.h) and CONSOLE_FRAMEBUFFER (in config/console.h) and use a command such as "console -x 800 -y 600" 
to switch into a graphical framebuffer mode.  That should bypass the bizarre text window that the Hyper-V G2 firmware seems to have created.

Also, you should probably use iPXE's native Hyper-V network card driver
(netvsc) rather than the SNP driver.
